Mini Flourless Apple Sunbutter Muffins

These are a decadent little 3 bite treat for you and your littles. Because there is no flour they are truly rich and dense, packed full of flavor. You can also sub sun butter for any other nut butter you would like! These are super quick and easy to make and you can get your little ones involved no problem.

Everything goes right into the food processor and then is spooned into a mini muffin tray. Cooking for just a quick 10 minutes this is a great quick prep snack you can store for the week ahead and a perfect recipe to make with those apple orchard apples in September!

Mini Flourless Apple Sunbutter Muffins

Ingredients

  • 3 Small Apples: cubed

  • 1 1/2 cup Rolled Oats

  • 1 cup Sunbutter

  • 1 Egg

  • 3 tbs Maple Syrup

  • 1 tsp Cinnamon

Directions

  • Pre-heat oven to 350 degrees.
  • Line mini muffin tray with liners or spray with oil to prevent muffins from sticking. ( I used coconut oil ).
  • Add all ingredients to food processor and blend until smooth.
  • Spoon into mini muffin tray.
  • Bake for 10 minutes.

Notes

  • Muffins will be super moist and rich. They will not rise much so no need to worry about only filling each muffin spot half way.
